I love balls.
They’re the perfect size to pop in your mouth. Or roll them around your fingers; they’re smooth and round and squishy. Oh, and they taste delicious. Suck them, lick them, bite them… let the intricate and intense flavors dissolve and marinate in your mouth. Let the sweetness swirl around your warm saliva. Move your tongue around the crumbly texture as you savor the delicious flavor. Mmm, how I love balls.
… you know I’m talking about dessert balls, right?
Specifically, these chocolate walnut date balls. 😀
You really can’t go wrong with chocolate and dates. These balls have a crumbly consistency due to the walnuts and the dates make the balls sticky (and sweet!). Plus, they are laced with delicious raw cacao for a rich chocolate taste, and who doesn’t love chocolate?
They are super easy and quick to make, too. Who doesn’t love a quickie in the kitchen? Cooking is over so fast and you can enjoy these balls without blowing your whole day. Delicious.
These balls have only five ingredients and all you have to do is throw everything in the food processor and then form the dough into the round little ball shapes (or any shape you want, really… but like I mentioned before, I’m quite fond of balls and how they fit in my mouth).
Molding the balls is a very therapeutic process with the stickiness and slickness and rough texture of the balls and your fingers moving along the textured surface, smoothing out any wrinkles. Like a massage. A ball massage. Oh, and the size is customizable… make them as big or as small as you want them. Everyone has a different preference when it comes to ball size, I suppose. 😉
Even eat it straight from the spoon. I get so into licking every last bit that you might find me nose-deep in the food processor with chocolate crumbles and sweet syrup painted across my face.
They form into balls easily and hold their shape well. Flexible but firm, just the way balls should be. Refrigerating them makes them a little firmer and is the ideal way to store, although they can be eaten right away (sometimes I just can’t keep my mouth away from the balls long enough to chill them!). Balls are fun to play with (and eat!) whether they are soft and squishy or firmer and more dense. I love them all. The taste is what matters, right? These chocolate walnut date balls are definitely adequate in the taste department.
I snagged this recipe – Grain-Free Raw Brownie Bites – from Paleo Grubs. Such an easy recipe to whip up. I could eat balls any time of day, all day long. It turned out great the first time I made it – round, sweet, delicious – and the only problem is that I struggle not to demolish the whole batch when I make it. Balls go fast in this household. They keep fresh for a week in the fridge (probably more if they ever lasted that long!) and would probably freeze well too, but good luck not devouring them as soon as you get your eager little hands (or should I say mouths) on these chocolate balls.
From this recipe I get around forty to fifty small balls (my preferred size… like shown in the pictures) depending on how many I eat while I’m making them. You could easily make them smaller or larger depending on preference. Some people might like to have a ball small enough to plunge into their mouth and swallow in one bite, whereas others might like big balls where they can snag a few bites out of it. People are into different things. 😉
Whatever size, shape, or texture you choose, these balls are guaranteed to be an easy, delicious dessert! Oh, how I love balls.
- 1.5 cups walnuts
- 1 cup dates
- ⅓ cup cacao powder
- 1 tsp vanilla
- Dash of salt
- Grind walnuts and salt together in a food processor (or blender) until finely ground. I like mine to be a little crumbly to give the balls texture.
- Add the remaining ingredients (cocoa powder, dates and vanilla extract) to the food processor. Pulse until everything is thoroughly combined. Add a few drops of water as needed to help it stick together (optional).
- Form the mixture into balls (or any shape of your choice) and try not to eat it by the spoonful straight from the food processor. These will store safely in your refrigerator for up to a week but good luck not eating them up before then! Tip: Stick them in the fridge for a few minutes before eating so they can firm up.
You can use unsweetened cocoa, raw cocoa or anything of your preference (even sweetened cocoa if you really want). I use 100% raw organic cacao.
You can substitute the walnuts for any nuts you have on hand. I’ve made this with pecans, cashews, almonds and hazelnuts. It will turn out differently depending on what type of nut you choose!
The salt and vanilla are optional but really develop and intensify the sweet chocolatey flavors.
